Kashi-wheat germ oatmeal
Serves 1
1/2 cup rolled oats
1/2 cup Kashi GoLean Crunch
1/2 cup skim milk
1/2 cup water
1 tbsp. wheat germ

Place the rolled oats and Kashi into a microwave safe bowl. Do not mix. Add the milk and allow to sit for 2 or 3 minutes (the milk will not cover everything in the bowl).

After allowing the oats and Kashi to sit, add in the water. Do not mix.

Microwave for 1-2 minutes (or until the oatmeal starts to bubble - this depends on your microwave).

Sprinkle the wheat germ on top, stir everything together, and enjoy!
Microwave Sweet Potato
Serves 1
1 medium sized sweet potato
2 tbsp. ground walnuts
1 tbsp. honey
Pumpkin pie spice

Wash potato and pierce with a fork several times in order to let steam escape when cooking

Place potato on a microwave safe dish and microwave for 5 minutes. After 5 minutes, flip the potato and microwave for another 5 minutes. Repeat as necessary.

When a fork can easily pierce and be removed from the sweet potato, remove from the microwave and slice it in half

Mash the two slices (with skin removed if you’d prefer) and top with the walnuts, honey, and pumpkin pie spice to taste.
Middle Eastern Veggie Wrap
Serves 1
3/4 cup baby spinach
1/2 cup mushrooms
1/2 cup broccoli florets
1/2 cup chick peas
2 tbsp. hummus
1 large whole wheat wrap
Onions, green peppers, and any other veggies you’d like to add

Place broccoli, mushrooms, and chickpeas in a microwave safe bowl and microwave until soft enough to mash.

Mash the broccoli, mushrooms, and chickpeas together
-
Spread hummus on the wrap

Place baby spinach on top of the hummus

Spread mashed broccoli, mushrooms, and chickpeas on top of spinach

Roll the wrap and enjoy!
Baked almonds
Almonds (as many as you wish)
Water (amount varies based on amount of almonds)

Place almonds in a sauce pan and add water. Make sure that almonds are completely covered by water but it isn’t necessary to add more than that.

Bring the water and almonds to a boil.

After 5 minutes of boiling (or until almond skin can be easily poked off with a fork), take the pot off of the burner and drain the water from the almonds.

After letting the almonds cool, peel the almond skin and place on a cookie tray
-
Bake at 350 degrees for 30 minutes. This time varies on how dark you want your almonds to be.
Banana & Wheat Germ oatmeal
Serves 1
1/2 cup rolled oats
1/2 cup skim milk
1/4 cup water
1 small banana
1 tbsp. wheat germ

Place the rolled oats, milk, and water in a microwave safe bowl and microwave for 1-2 minutes (it depends on your microwave and how thick you like your oatmeal to be).

Chop the banana and place on top of oatmeal

Top the banana with the wheat germ, mix, and enjoy!
“Apple pie” yogurt
Serves 1
1/2 cup plain yogurt
1 medium sized apple (whatever variety you’d like; I use golden delicious)
Pumpkin pie spice
2 tbsp. chopped walnuts
2 tbsp. granola

Chopped the apple into bite size pieces, place in a microwave safe bowl, and sprinkle pumpkin pie spice over them.

Microwave the apples for 40 – 60 seconds

Place the plain yogurt on top of the apples and mix until completely blended
-
Sprinkle on the granola and walnuts, mix, and enjoy
Portobello Burgers
Serves 4
4 large portobello mushrooms
1/3 cup balsamic vinaigrette (I use the Cape Cod brand)
1/3 cup olive oil
4 wedges Laughing Cow original Swiss cheese
4 Whole wheat hamburger rolls

Place the olive oil and balsamic vinaigrette and a large freezer bag. Add the portobello mushrooms and allow them to marinate for 15-20 minutes

Heat up a non-stick skillet on the stove (no extra olive oil or butter needed). Place the mushrooms gill side down on the skillet and allow to cook for 6 minutes. After 6 minutes, flip the mushrooms over and allow to cook for another 6 minutes. Repeat until all mushrooms are cooked.

Spread a wedge (or half a wedge, depending on how much cheese you like) on each roll.

Place the mushrooms on the hamburger rolls and enjoy!
A Spin on Brie
Serves 1
1 Laughing Cow light Swiss wedge
2 slices whole wheat bread (or any type of bread for that matter…)
1 apple
1/4 cup walnuts

Toast the bread
-
Thinly slice the apple (so that they will comfortably sit on the bread)
-
Spread half of the cheese wedge on a slice of bread
-
Layer the walnuts on top of the cheese
-
Place the apple slices on top of the walnuts
-
Spread the other half of the cheese wedge on the other slice of bread, complete the sandwich, and enjoy!
Vanilla-y Oatmeal
Serves 1
1/2 cup rolled oads
1/2 cup light Vanilla soy milk
1/2 cup water
Optional: Fruit, nuts, cinnamon/pie seasonings

Place oats in a bowl

Pour in soy milk and water and let mixture sit for 1-2 minutes (or until liquid is mostly absorbed)

Microwave for 1 1/2 – 2 minutes (time will vary depending on your microwave and how thick you want your oatmeal to be)

Stir oatmeal and add toppings (I love mine with pumpkin pie spice and slices of either pear or banana)
yummm the “spin on brie” sounds so good, and it’s so simple—I can’t believe I’ve never thought of it myself. I will definitely be having this for lunch soon!
