I have 3 1/2 hours until I get to head to the airport (and one class to attend during those 3 1/2 hours). I am so excited. I always love going back to CT and getting to see all of my family, etc but this time I’m even more excited simply because I am just so burned out and sick of school food. A break is most definitely in need and I am going to enjoy every last minute of it.

(Just a note: I’m going to try to take as many pictures as I can, but I can’t guarantee a picture for every meal simply because I feel like it’d be weird to pull out a camera at family dinner. I’ll do the best that I can though!)

Breakfast

When I got out of bed this morning, my first thought was “I really really don’t feel like making oatmeal this morning”. So I didn’t. And because I don’t have anything else breakfast-y and because my appetite this morning was nowhere near as big as yesterday, I decided to have a nice ripe banana and a pecan pie Larabar. It was the perfect amount for today.

Snack

Since I’m going to be spending a few hours on a bus and a few hours at the airport, I’m packing some snacks. I’ll most likely buy some milk and/or a salad once I get to the terminal, depending on how I feel, but I like to have my own snacks on hand just in case…plus the entire ordeal spans both lunch and dinner so I’m going to need some food!

The repetition continues

Despite my rocky morning, things have shaped up and I managed to have a semi-productive late morning and early afternoon; if doing laundry, taking out the recycling, and packing is productive. I’m not even sure anymore; spending the past week and half doing nothing but homework and running has really skewed my idea of what a “full day” consists of.

 Lunch

My huge breakfast held me off extremely well. I didn’t even start to get hungry until after 2:00, which is absolutely amazing. Lunch today was good but a bit boring and not “technically” a lunch. It was more of a midafternoon snack because I knew I’d be kicking myself if I didn’t eat at least a little bit before running off to class at 3:00. I ended up having a few almonds, a nectarine, and some plain yogurt with blueberry jam. I don’t have any pictures because I was slightly rushed and completely forgot about pulling out my camera until after I had eaten most of the “meal”. But oh well.

Wrangling my sweet tooth

When I got home from class I was itching for something sweet (well, cookies in particular…but I don’t have any and the ones in the vending machine taste extremely preservative-y…which is guess is not surprising considering they’re in a vending maching) so I made myself a nice big mug of hot chocolate. It was delicious and just what I needed 🙂

 Dinner

I had my usual “Gardenburger meal” for dinner: A Gardenburger on a whole wheat English muffin with some baby carrots and plain yogurt with a spoonful of blueberry jam mixed in. It’s a good standby meal I’d say…and quick, which is very lazy-college-student friendly.

I love Gardenburgers but 4 in one week is a bit much. I didn’t plan my grocery trip very well…had I gone a day or two early I wouldn’t be in this predicament but I shouldn’t complain; I’d rather eat a Gardenburger 3 days in a row than eat dining hall mush 3 days in a row. But I’m just trying to “clean out” my fridge before leaving on break…

The good news is that from tomorrow night on (well, for a week at least) I will be eating delicious, kitchen prepared meals. I am wicked excited about the entire “having a kitchen” situation that I will be faced with. Pots, pans, blenders…a dishwasher (!)…I cannot wait!

When I went to sleep last night, I was envisioning the perfect Thursday; I was picturing sleeping in, going for a long run, eating a nice relaxing breakfast, and just having the easiest day.

 But of course that couldn’t happen. Of course not. I did sleep in…after waking up at 6:00 and then again at 7:30 and having to convince myself to sleep later. Then I got out of bed (feeling absolutely famished despite overeating last night), ate an apple pie Larabar and an orange to fuel up for a 7-miler, and learned that my right knee was feeling extremely tweaky and it hurt to just walk. So there went my long run. My next and last resort was to make a delicious breakfast and get on with my day. But even that didn’t go off without a hitch; as I was walking back to my room, I tried to switch my grip on the extremely hot bowl and ended up dropping it: Corelle and oatmeal went everywhere and everyone walking by looked at me like I was insane instead of offering to help.

 Thankfully I have another bowl, albeit a huge one that I use to keep my fruit. But I washed that out and made myself a ginormous bowl of oatmeal. I used the same “recipe” as yesterday but I doubled the size because of a supersized appetite that I woke up to; I used 1 cup rolled oats and 1 cup light vanilla soymilk…all topped off with a banana and some pumpkin pie spice

Phew. So that was my morning. I’m sorry for the pity party, but I just could not believe my terrible luck! Hopefully things will improve by the time I post lunch…

I’m done!

Midterms are finally over. I honestly felt like there would never be an end but it’s here. I still have a little over a day until I get to go back to Connecticut for spring break, but a day really doesn’t seem all that terrible considering I really have no major assignments to worry about and, even better, no midterms to study for! And now that I have no more brain cramming to do, I will be able to post more regularly and less rushed.

Pre-workout snack/Workout

When I my alarm clock went off this morning I was incredibly tempted to just crawl back into bed and set my alarm for a later time; I was tired and cranky and just did not feel like running. But I ate a cherry pie Larabar and headed out the door. And I’m glad that I pushed myself and “forced” myself to run because it truly made me feel better and a tad bit more relaxed; I ended up running 5.5 miles. I’d like to start lifting some weights again just to help with injury prevention and I considered doing a half hour today but decided that I needed to get in some more studying.

Breakfast

I tried a new spin on an old combination today; 1/2 cup rolled oats cooked with 1/2 cup light vanilla soy milk and 1/2 cup water. After the actually cooking, I sliced a banana on top and sprinkled on some pumpkin pie spice. I’ve decided that I like the sliced banana much better than the mashed banana; the texture is much easier for my stomach to deal with. I also had a mug of skim milk and an orange. Overall, it was delicious.

Lunch

I wasn’t all that hungry come lunch time so I decided to have a large salad with lots of veggies, half a bag of pretzels, and a small carton of skim milk. Pretzels and milk is very kindergarten but I forgot how absolutely delicious they are together. I felt like a youngster again 🙂

Veggies in my salad:

  • Romaine lettuce
  • Baby spinach
  • Mandarin oranges
  • Onion
  • Cucumber
  • Tomato
  • Kidney beans

Snack

My blood sugar always dips between 4:00 and 5:00 so I’ve started to “schedule in” a decent snack to tide me over until dinner. No matter how satisfying my lunch was, I always get hungry. Today I decided to have a super sweet and juicy nectarine and the other half of the pretzels that I started at lunch. Of course I’m still hungry but I know that once I digest and hydrate the “hunger pangs” will subside.

 Oh how wonderful it is to not have to announce that I’m going off to study….

A damp and tired Tuesday

 Once today is over I only have one more day of insanity. Then I’m done with midterms! I’m still feeling quite stressed and overwhelmed but seeing the light at the end of the tunnel is helping (and the good food doesn’t hurt either…)

Breakfast

This morning I dragged myself out of bed at the crack of dawn so I could walk across campus and make it to my chem lab on time. We were synthesizing a compound, which was fairly easy but also fairly time consuming. Thankfully I’ve started eating oatmeal again so that held me over very nicely. I didn’t do anything creative today, however; I stuck to plain oatmeal with some honey peanut butter mixed it. I also had a nectarine and somehow managed to chug a huge mug of English breakfast tea before running out the door.

Snack

After lab I had an Apple pie Larabar. I need to remember to not eat those and then take my multivitamin because that makes me headache-y/nauseous for some reason. I guess my stomach wants a multivitamin to be taken with a more substantial meal! (And yes, I have been using the same picture of the apple pie Larabar for the past few days. It looks the same so I don’t see the reason to take a new picture every time!)

 Lunch

Lunch was seriously better than I could ever imagine. I know I say that about nearly every meal, but after viewing food as an enemy for so long and finally making amends I can actually taste and appreciate everything again. It’s great and I don’t want it to ever go away.

 I had a Gardenburger on a whole wheat English muffin, baby carrots, celery with hummus, and some plain yogurt with blueberry jam. I bought Dannon plain yogurt this time around (because it was cheaper and I was trying to be frugal…) but I really wish I had bought Stoneyfield instead. The taste is much different on an indescribable level and Stoneyfield is much better, in my opinion.

 Time for some last minute studying before my psych exam!

Dinner and studying

I am unnecessarily stressed out right now; thankfully I’m feeling slightly better than a few minutes ago. I let a girl down the hall from me borrow my notebook (with 3 subjects in it) and I was getting extremely antsy over getting it back before tomorrow since I need to use it to study for Wednesday’s midterms.

 Blah. Thanfully I had a good, somewhat stress busting dinner.

Dinner

I had my typical wrap filled with tons of veggies for dinner tonight. I’ve been trying to branch out and try new things but the sandwich never fails to fill me up… it’s a go to when I want a dinner that I’m absolutely sure will do what it’s supposed to. And the veggies always taste so delicious. I love how well the different varieties of peppers go together. I also had a mug full of skim milk and some baby carrots.

Snack

For snack I munched on a handful of almonds and a golden delicious apple. I don’t have any pictures of them because I was in the midst of studying while I was eating but I just wanted to mention them for accountability purposes. Plus almonds and apples are just wonderful together.

 Now back to the brain drain…
